Menu Planning - November 17

Here's a rather accurate picture of our expressions around the dinner table after day of managing work, school, and constant newborn care:


The good news: there was dinner was on the table. 

So, it's Wednesday late afternoon, but here's my weekly menu planning post. 

Sunday: what a bummer of a day! Tornados blew through the Chicagoland area and kept us home all day. For dinner, we cooked up the last of our brats (these were slated for last week, but plans changed and I forget why). There may or may not have been wine. Postpartum brain has me in its clutches. 

Monday -  I think the above picture was Monday night's dinner - roasted broccoli on toasted bread with fresh ricotta cheese. And a salad with greens, roasted pumpkin seeds, orange pepper, celery and parmesan cheese. 

Tuesday - I finally roasted that pie pumpkin last night. In a sauce pan, I heated up some heavy cream and added fresh nutmeg (should have also included shallots .. so next time). After mixing the cream and pumpkin, I fried up some sage and threw that in to make a sauce to top some pappardelle. Our side was a fennel and red onion salad - thinly sliced in the food processor and marinated in white balsamic vinegar. 

Wednesday - tonight we are pulling something out of the freezer: Trader Joe's BBQ Chicken Teriyaki. This will be nuked and placed over white rice. Our side will be a green salad. Fancy, no? 

Thursday - Tomorrow we plan to use up leftover pumpkin filling (already mixed with cream sauce and nut meg) and the leftover noodles to make an unconventional lasagna. Spicy italian sausage and onions will be added to the sauce and we'll use up the rest of the fresh ricotta. I have no idea how this will turn out, but we are being adventurous these days. It is mostly a success because we are all too damn hungry  by dinner time to care how things taste. 

Friday - I'm going OUT!! To celebrate a best friend's bday!! New dress, hip restaurant, best friends. Can't wait!! 

Menu planning has been a bit fly-by-the-seat-of-our-pants style, but we're getting by. Having the grocery store super close makes it fairly easy to eek out a last minute meal. And the most important thing is that we are eating.
