Here we go..
Monday - Chili (No formal recipe but the basics: onion, pepper, garlic, hot pepper / ground beef / tomato paste, diced tomatoes, kidney beans / cumin, chili powder) with shredded cheese, scallions and sour cream for toppings
Tuesday - couscous/orzo/quinoa/chickpea harvest grains blend I picked up at trader joes with roasted zucchini, tomatoes, and onion with grated parmesan cheese
Wednesday - leftover chili with avocado, salsa, and tortilla chips (served "dip" style)
Thursday - soy glazed sweet potatoes (From Deborah Madison's Local Flavors" with tofu and a green salad
Friday - not sure yet..
