First up, a killer dish we had last weekend - grilled wild salmon with an apricot soy marinade. First of all, wild salmon is in season for a very short while. It's pricey, but unbelievably delicious. We had this last weekend - grilled it up with an apricot/mustard/soy marinade (mark bittman - huh) - and omg was it good! If you're into salmon, I'd definitely suggest this combo. On the side, we had grilled poblano peppers stuffed with a crazy mix - we used up our leftover carrot slaw, added a huge kick with an entire jalepeno pepper (on fi-yah, I tell you!), and mixed in feta cheese. It was a serious medley of flavors and textures - crunchy walnuts, sweet and chewy carrots/cranberries, sizzling hot peppers, creamy tangy feta, mellow poblano - it worked somehow. It was also really nice to dine outside on our patio.

Lastly, I had eggplant patties on the menu last week. After looking at the recipe, I decided to change things up a bit - I'd make the patties, crumble them, make up my own tomato sauce (tomatoes, shallot, butter) and throw it over fresh pasta (in this case, saffron flavored). Add some fresh parmesan and you have yourself a meal. It was bursting with flavor, and perfectly summery at the same time.
Moving away from food for just a second, we visited some friends on Saturday (they have two girls .. 3 and almost 2) and spent the morning pooling and picnicking for lunch. On the way back to their house, Baby decided definitively that it was time to run. She led the way, sprinting like it was her job. The other girls noticeably furrowed their brows, shrugged and joined in. It was quite a sight to see - three little pairs of legs moving as fast as they could go down the sidewalk. I was simultaneously proud and concerned that not everyone understands that "running" is the obvious after lunch activity ;)
So, on the menu for this week..
Sunday - tonight we used up our leftover lima beans in a french dish (from The Country Cooking of France cookbook) with pearl onions, bacon, parsley and chives. I threw half a boiled egg on top for kicks. It was simple and delicious - just how I like it.
Monday - As I stated above, though we try to stick to our menu plans, things occasionally change. We weren't able to get to everything on last week's menu. So, Monday will be potato salad along with a tomato/avocado sandwich (Deborah Madison, Local Flavors). The sandwich is tomato, avocado, red pepper, goat cheese and an herb vinaigrette on ciabatta.
Tuesday - The chickpea salad sandwiches I didn't make last week. This will be accompanied by a watermelon/feta/mint salad.
Wednesday - A homemade black bean layer dip for tortillas/chips. It will likely include beans, avocado, salsa, a jalepeno (because I haven't learned..), sour cream and maybe scallions.
Thursday - white fish (en pappiotte) with fresh corn (will just cut it off the cob and throw it on the fish), shallot, and cilantro - with fresh lime juice added when it's done. Probably a side salad of greens with this.
Friday - roasted bell pepper, shallot, and goat cheese pizza (I'm hoping to find fun and colorful bell peppers at the farmer's market - this should be pretty).
I leave you with this picture taken shortly after my hugely successful solo five miler today (um, sub tens!!) - the Chicago Air and Water show reminded us all that summer doesn't last forever.. But since it's still here for now, take advantage and enjoy things like the beach (with said air and water show in the background), and random live afternoon outdoor concerts while you still can.
