Menu Planning - June 30

Can't say we aren't eating well these days! Yesterday was one of those days where we planned our morning around patronizing various specialty stores so we could pick up goodies for dinner (& lunch). Our morning began with coffee and waffles at Wafel. (You would think a toddler would enjoy a chocolate/cinnamon waffle...but mine attempted to throw hers on the floor. Luckily her mama has mad reflexes and caught the poor thing before it hit the ground... but I digress). Then we headed to the French Market to pick up Montreal style pastrami. This is one of the many reasons I could never go back to vegetarianism! It was at least as good as Katz's if not better. We made tiny sandwiches for lunch on bread from the Little Goat Bakery. We also picked up vegetables for dinner (Farmers Stew, a Deborah Madison recipe from her book, Local Flavors). Next stop was the fish market for another whole fish purchase (Mediterranean Sea bass). Our plan was to grill the fish to go along with the veggie stew. And yes, Baby got to "touch a fish" multiple times. I think she might be over her initial fascination.

To make a long story short, dinner was perfect. We stuffed the fish with fresh herbs (oregano and thyme) and lemon slices, and dusted it with salt, pepper and olive oil. Grilled it for about 5-7 min per side.

For the farmers stew, we chopped eggplant, zucchini, onion, and local tomatoes. The onions sweated in olive oil, we added wine, and threw in the veggies along with fresh thyme and oregano and some tomato paste. Baked it for about an hour and a half. Then drizzled olive oil on top. Couldn't have been easier. You can use any veggies you want. It also makes a great pasta topper, which we're planning to do with the leftovers.

We also had dessert: almond flour chocolate chip cookies. Saw this recipe on Mommy, Run Fast's page. They looked too easy and delicious not to try. Plus I've have almond flour for some time that I've been trying to use up. They were amazing! (I also omitted the bacon - not a fan of bacon in in my dessert.)

The plan for this (short) week:

Sunday - chopped poblano peppers (which were grilled last night) mixed with fresh ricotta and mint (also from Deborah Madison's Local Flavors book) served in corn tortillas.

Monday - fresh ravioli (spinach and cheese) topped with leftover farmers stew. Probably some Parmesan cheese on top and perhaps a salad of mixed greens on the side.

Tuesday - homemade hummus and fresh veggies - plus whatever is left in the fridge!

And we'll be away for the Fourth of July weekend, so that's the extent of my planning this week.

Re: running: This morning I ran my longest run since this pregnancy began. It was very close to 5 miles (garmin was a stinker in the beginning so I'm not sure of exact distance). Very happy with this!!

Re: Baby Junior - we found out this week that she's a girl! Baby will have a little sister :)

I'm so glad you tried the cookies and liked them! I'm drooling over your picture- need to make them again soon. :) So funny about the waffle- my daughter would have gobbled that up! It's somewhat obvious when we're around sweet things that we limit them at home, ha!

Two girls! How fun -- congrats!

Food sounds delish, but I'm always a little turned off by the fish's head on there. I don't like to be reminded that meat comes from animals. Plus, I feel like it's looking at me and judging.
