Menu planning - March 17 ... And St. Patrick's Day

Happy St. Patrick's Day!!

Here's our menu for the week -

Sunday - Corned beef and cabbage. Left Hand Brewing Co. "Nitro" Milk Stout. In today's case, the drink is as important as the chow. 

Monday - Dal (chickpea) and rice (and yes, we used tea bags for this recipe!)

Tuesday - Dumplings  (pork and shrimp) with sauteed bok choy

Wednesday - Roasted red pepper hummus with pita, tabouli and yogurt

Thursday - Whole wheat pasta with roasted cippolini onions, blue cheese, thyme and candied walnuts

Friday - Vegan chilaquilas

It's still middle-of-January-cold here in Chicago. It's pretty depressing, since the sun shines so infrequently and the wind howls incessantly. I haven't worn anything but my warmest running tights since December - and hat and gloves have been like second skin. I won't drone on and on about the weather, but it's really taken a toll on my mood :(

I braved some ridiculous chill yesterday to log about five miles. It was too cold to sport my green and white arm warmers; that, in and of itself, was a travesty. So aside from low cut green socks, I was basically free of festive apparel. Here's a shot of our green river this year - even the cold, gray uninviting skies couldn't keep away the crowds.




Today started out much like yesterday - only with an even more vicious wind. But the clouds parted and actual, real live SUN came out. Luckily my run today was bright and shiny, but still cold and winter-like. I guess that is the best I can ask for during the month of March in Chicago. Here's hoping it goes out like a lamb.

Living in upstate NY always affected my mood in the winter, too... I seriously counted down until spring starting in about January. :) I'm glad it's March- spring will be coming soon!

Spring can't get here soon enough! Red pepper hummus and pita is one of my favorite snacks.
