Plain and simple -
Sunday - Dal (red lentils) with rice
Monday - Pecorino Fried Bread with Broccoli
Tuesday - Indonesian Fried Rice (Deborah Madison, page 535)
Wednesday - Whole wheat pasta with leftover broccoli (from Monday) and spicy italian sausage
Thursday - Fish tacos / corn tortillas (probably mahi mahi, lime, cilantro, red cabbage..)
Friday - guacamole with chips, homemade bean dip (refried beans, salsa, sour cream)

Oh man, it's too close to dinner for me to be reading this... my stomach just growled. It all sounds delish! We love dal, but haven't made it in a long time.
Fish tacos! That's a great idea. I haven't had those in ages.
I love fish tacos. Our kids aren't fans, though. Of the taco aspect; fish they love.
On Fridays, we never plan to cook; it's always "pizza" or "eat out." It's just too hard at the end of the week to imagine making dinner, so I like the bean dip idea!
If there is one thing I miss when. I changed to a plant based diet it's fish tacos. Yum!
