Menu Planning - February 10
Here we go again - another week of menus:
Sunday - pizza (italian sausage, onions, mozzarella/piave cheese) - this was supposed to be Friday's dinner, but we went away for the weekend..so we saved it for tonight
Monday - hominy/chick peas with braised collard greens
Tuesday - vegan chilaquiles
Wednesday - hominy/chick pea patties with fish (this will be a Mexican theme with cilantro/lime/red onion) For the patties, it will be the leftover hominy/chickpeas from Monday mixed with scallion, egg, cumin and cilantro formed into patties and pan fried -- pretty much improvising here).
Thursday - Valentine's Day dinner: prime rib with creamed spinach (one of our few forays into the "serious" meat world; the creamed spinach is Deborah Madison)
Friday - veggie wraps (cream cheese, shredded cucumber and shredded carrot, raw spinach, and whatever else we throw into a tortilla wrap) with terra chips (not a "real food" but a "fun food" for Friday :))
I am hoping to post a few more times this week - there have been many chilly winter runs and 100% in ab month!
