Menu Planning - January 13




A day late (sorry!) but that's because I had a STICK visiting us yesterday! More on that in my next post.

Before I list this week's menu, I want to credit a couple other websites for both practical and inspirational applications. One of my favorites is "100 Days of Real Food." It provides recipes, meal ideas, snacks, and everything in-between - using only real food. That basically means no processed food. It's a fantastic site - especially if you have kids - check it out!

I also enjoy Phyllis Grant's blog, Dash and Bella, from time to time. While it's not as practical, it's pretty awesome how she includes her kids in her cooking and has been instilling that passion in them since birth. It's also pretty entertaining.

So, here's this week's menu: 

Sunday - Dinner out with K from Team Stick to a vegan restaurant called Karyn's Cooked. It reminded me a lot of Blossom, on New York's Upper West Side. 

Monday - Homemade Chicken Soup (on Saturday, we roasted a chicken with fingerling potatoes, so we had leftover chicken for soup)

Tuesday - Hummus Wraps (the hummus is homemade roasted red pepper hummus - I loosely follow 100Days' recipe; wraps include hummus, lettuce, shredded carrots, salsa, hot sauce - and probably sour cream (or yogurt) and feta cheese) Crunchy raw veggies on the side. 

Wednesday - Fish en papillote (I'm thinking salmon, but I always have to wait and see what's fresh), collard greens braised in chicken drippings saved from the roasted chicken)

Thursday - Greek Salad (I'll do my best to recreate Kefi's version - which includes, tomato, cucumber, fennel, olives, peppers, onions, and feta);  a bowl of chicken soup. 

Friday - Lamb burgers (adapted from this recipe for lamb meatballs) and baked sweet potato fries

I'm jealous of your vegan restaurant! The hummus wraps sound awesome. Off to check out the recipe.
